Use targeted conversion updates instead of saving a detached ImgDat

convertAndGenerateThumbnails runs on a virtual thread with a detached ImgDat, so imgDatRepository.save() merged a stale orphan-removal collection and threw before thumbnails were generated — uploads completed but stayed unconverted and previewless. All three save() calls on that path (the already-a-PDF branch, the Docs rendition branch, and the error-recording catch) now use the targeted column updates added to ImgDatRepository.
